Il Gazzaladra is a sparkling white wine made from 100% Trebbiano Toscano grapes harvested early and still not fully ripe.
The grapes harvested by hand in boxes are subjected to soft pressing and then to cold static decantation. When the must becomes clear, the yeasts are added for the first fermentation in a temperature controlled tank. The wine is bottled with its yeasts and will finish its second fermentation with a consequent fermentation for 60 days. Yeast contact up to its use.
TASTING NOTES. Pale straw-yellow in color, it has floral aromas (acacia flowers) and green apple fruits. The presence of a yeast deposit on the bottom of the bottle confers notes of bread crust. The taste is fresh, harmonious with a good minerality. Fine and persistent perlage
